When cold, rainy days roll in you town and you feel like you could use some metabolism boosting, it’s time to prepare a good old-fashioned batch of amazing spicy fish soup. This delicious meal is low in fat, while being high in nutrients, and it will even energize you like nobody’s business. Seasoning can be adjusted to your own taste, which makes this awesome dish even better.
Ingredients
To make this dish, you’ll need:
½ onion, chopped
1 clove of garlic, minced
1 tablespoon of chili powder
1 ½ cups of chicken broth
1 can of green chili peppers, chopped
1 teaspoon of ground cumin
1 ½ cups of canned tomatoes, peeled and diced
½ cup of chopped green bell peppers
½ cup of shrimp
½ pound of cod fillets
¾ cup of plain nonfat yogurt
Preparation
Get a large saucepan, spray it with vegetable cooking spray, and heat it over medium high heat. Add the onions to the pan and sauté them, while stirring often, for about 5 minutes before throwing in the garlic and chili powder.
Sauté the mix for 2 more minutes. Add the chicken broth, chili peppers, and cumin, while stirring, and bring everything to a boil. Reduce the heat to low, cover the pan, and let it simmer for 20 minutes.
Add the tomatoes, green bell peppers, shrimp, and cod. Return the mix to a boil before reducing the heat to low again, and let everything simmer for 5 more minutes. Gradually stir in the yogurt until it has heated well.
