Most of East Coast has seen an insanely long summer and not only are we not complaining but we are embracing this late-September summer weather. And what better way to embrace it than with healthy seasonal food?!
Avocado is particularly rich in vitamin K, folate, vitamin C and potassium, and is easy to eat when blended with other fruits and veggies, making it a wonderful summer fruit.One of the foods that should top the list of certainly avocado, a rich superfood with high nutrient value.
Add ice to an avocado-based smoothie and you’ve got yourself a healthy and rather popular end-of-the-summer drink.
Despite the fact that corn is a starch rich in carbohydrates, which although not that popular the body undoubtedly needs, corn is also packed with vitamin A, potassium and fiber. Corn can be boiled to make a healthy and easy-to-make side dish, it can be added to soup or tossed fresh into a salad.
A surprise contender to make our list are figs, which when dry are available all year long, but when fresh in the summer have luscious texture packed with healthy nutrients, such as fiber, vitamin B6 and copper. Use figs as quirky pizza toppings or as unexpected key players in a healthy, Mediterranean smoothie.
