This amazingly mouth-watering cashew chicken is easy to make, but hard to forget. Once you make this delicious dish, you will have hard time going back to your previous cashew chicken recipe.

The recipe yields 4 servings, and is ready in 40 minutes.

Let’s get busy.

Ingredients
1 pound skinless, boneless chicken breast meat (cut into strips)
1 small onion (chopped)
1 green bell pepper (chopped)
1 (8 ounce) can sliced water chestnuts (drained)
2/3 cup cashews
2 tablespoons vegetable oil
1/2 teaspoon ground ginger
3 tablespoons soy sauce
2/3 cup chicken broth
2 tablespoons cornstarch

Preparation
Mix together chicken broth, soy sauce, ginger, and hot sauce. Stir and set aside.
In a wok or large skillet heat half of the oil and stir in the chicken. Cook for 5 minutes or until the chicken is no longer pink. Remove the chicken chunks from the wok and set aside.

Pour the other half of oil into the wok. Add the onion, green bell pepper, and water chestnuts. Cook for another 5 minutes, or until the onion becomes soft. Stir in the cornstarch and pour it into the wok. Bring to a boil.

Add the chicken and stir until the sauce becomes thick. Finally, sprinkle with cashews before serving.
