Ingredients
- 4 ounces of linguine pasta
- 2 chicken breast halves (skinless and boneless)
- 2 teaspoons Cajun seasoning
- Light sauce of your choice
- 2 tablespoons butter
- 1 red bell pepper (sliced)
- 4 fresh mushrooms (sliced)
- 1 green onion (chopped)
- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon pepper
- 1/4 cup grated Parmesan cheese
- Salt, black pepper and garlic powder to taste
Step By Step Preparation
- Cook pasta for 10 minutes in a large pot of lightly salted water. Drain the water and leave the cooked pasta for now.
- Coat chicken with the Cajun seasoning. In a large skillet over medium heat, sauté the chicken in butter for up to 7 minutes (or until near tender).
- Add the peppers, mushrooms, and green onion, and sauté and stir for a couple of minutes, then reduce the heat.
- Add the light cream, basil, lemon pepper, salt, garlic powder, and black pepper, then heat through.
- Finally, add the pasta (toss and heat through), then sprinkle with Parmesan cheese.
